Fans of the former AquaMarine buffet restaurant can rejoice - because it reopened in December 2020 with a brand new concept, and has received the Halal certificate for its well-loved buffet! Now known as Peppermint, this restaurant offers buffet dining and a la carte selections with a farm-to-table experience that includes plant-based options as well as sustainable and locally-sourced ingredients.

With its location on level 4 of PARKROYAL COLLECTION Marina Bay, you’ll get a spectacular (and romantic!) view of the hotel’s atrium garden. The new restaurant is even framed by beautiful green glasshouses that will make you feel like you’re dining amongst nature! ? Diners at Peppermint can also step outside onto the terrace to discover the restaurant’s own urban farm. Peppermint’s skilled chefs transform the herbs, edible flowers, and vegetables grown here into garnishes, aromatics, and ingredients for your meal!

Their a la carte buffet of over 40 dishes is laden with local and international favourites prepared at their open display kitchen before being delivered right to your table. Look forward to sustainable seafood including juicy oysters, sweet Tiger Prawns, and succulent mussels that will bring the taste of the ocean right to your plate. ? There’s also fork-tender beef, mouth-watering lamb, and a rotating monthly themed feast of special offerings. Make sure to try their Singapore Lobster Laksa and Hainanese Chicken Rice!

Sustainable ingredients are woven into the new menu, with dishes like pan-seared Sustainable Barramundi with Honey Soya Emulsion and Cauliflower Rice. Peppermint’s a la carte menu even includes plant-based options for the conscious diner. You can look forward to dishes like the Guilt-free Burger made with plant-based patty and served with crispy kale in an oatmeal and brioche bun! Don’t forget to satisfy your sweet tooth with their signature durian pengat and peppermint cucumber gelato with Himalayan salt, in addition to the lavish spread of cakes. ?
